Crispy, Salty, Sweet Peanut Tofu Salad

Need a super easy weeknight dinner that you can throw together in ten minutes?  Then look no further!  This fresh salad has all the answers.  Crisp vegetables, crunchy tofu and a sweet and salty peanut dressing that brings it all together.  We love this salad so much that it appears (it many different forms) on our table a lot.  Usually reserved for warmer weather, the crispy tofu adds a comforting effect that works even on the coldest of days.

This recipe is quite versatile.  You can really use any type of veggies and leaf lettuce you prefer… or whatever is in your fridge! Don’t like tofu?? Use chicken or a hard boiled egg instead.  Don’t like coriander?  Try mint!

  1. I have always been a little conserved about using tofu in my dishes, but after seeing this easy and beautiful recipe, I think I’ll give a try 😊

    1. I was too! But this is so easy. I forgot to to add that once you take the tofu out of the package, make sure to wrap it in a towel and push down on it to get the water out! Best to use firm tofu! Let me know how it turns out!
