Need a super easy weeknight dinner that you can throw together in ten minutes?  Then look no further!  This fresh salad has all the answers.  Crisp vegetables, crunchy tofu and a sweet and salty peanut dressing that brings it all together.  We love this salad so much that it appears (it many different forms) on our table a lot.  Usually reserved for warmer weather, the crispy tofu adds a comforting effect that works even on the coldest of days.

This recipe is quite versatile.  You can really use any type of veggies and leaf lettuce you prefer… or whatever is in your fridge! Don’t like tofu?? Use chicken or a hard boiled egg instead.  Don’t like coriander?  Try mint!
