This is more of a technique then a recipe.  I learned this way of cooking scrambled eggs from my aunt and it changed my life.  Creamy, gooey, light and fluffy is how I would describe the texture of these eggs… and crowd pleasing of course! I make these for egg sandwiches and breakfast tacos or we have them alone and served with a side of sliced avocado.


Making sure that your heat is on low is the key to the texture of these eggs. You want to cook them low and slow, making sure to continuously stir the mixture.


This is an easy way to make eggs for a crowd as well.  Just add one egg and another 20g of cheese for each additional person.
