So by now you might have noticed that I am a big fan of comfort food. I love to cook comforting meals and thinking up ways to reinvent classic combinations is always fun. This week its burgers!  We love burgers in our house, but when I’m trying to keep the carbs down, I like to find different ways of making them.  What makes these burgers stand out in particular is the heap of crispy oven roasted kale on top.  The kale adds texture and a bitterness that cuts through the richness of the burgers and cheese.

I serve these bun-free… you know… to make it healthy. I top mine off with blue cheese but you can use any kind you like.  This combination is so tasty you don’t need the usual burger staple sauces like ketchup or mayo… although I could definitely see pickles still being mighty tasty on this burger!

I always use the same burger recipe no matter the type of burgers I am making.  I find that the mustard that I add for moisture really goes great with the blue cheese and kale in this recipe.

To Serve: Pile the kale on top of the burgers. I like to serve mine with roasted cherry tomatoes on the side too!
