Every morning we have the same breakfast battle: oatmeal vs pancakes. I have one little boy who loves oatmeal and one who loves pancakes and the fight over what’s for breakfast starts before we even enter the kitchen.  You can imagine what a start to the day that is. At least wait until I’ve had my coffee to start the bickering!

So in the effort to not strangle my children keep my sanity, I came up with this delicious and healthy amalgamation.  Now everyone is happy and I can enjoy my coffee in peace… ya right… but at least they’re not fighting over what’s for breakfast anymore 🙂


This recipe is so quick to throw together that I can easily make these in the morning before school. Or if that is too daunting for you, make the batter in the evening before so all you have to do is fry up in the morning.
