What we didn’t realise when we left the states 9 years ago was how hard it would be to find really good versions of our favourite foods from home.  London wasn’t so bad for this – the burger was really getting traction there when we moved across the pond 9 years ago.  But it was our move to China that really highlighted this “problem” (I know, first world problems).

Don’t get me wrong, the food in China was amazing and I miss it everyday, but sometimes you just need a good juicy burger.  So without many options, and I started to develop my own version of the perfect burger… and then we moved again…

It took a while for decent cheeseburgers to arrive in Amsterdam and even though there are a few out there now, I still call this my favourite. A generous dollop of mustard is the secret ingredient to keeping these burgers nice and juicy.
