Another great recipe from my grain-free days! See I told you that time was inspiring! This makes use of crispy chickpeas instead of croutons and the roasted garlic and cauliflower gives it a nice earthy flavour. This is an easy dish to make ahead of time and to just assemble at the last minute.
You can switch this up and do it with broccoli instead of cauliflower. Also instead of yogurt, use mayo to make it dairy free. You can also use mayo to thicken the dressing if you find it to be too loose
