As I have been telling you, I have been trying to introduce vegetarian meals into our diet at least a few times a week. I think we are all coming to realise the impact that animal agriculture is having on our environment. Don’t get me wrong, I still love meat (I think you can tell from my recipe log) but I am making a conscious decision to eat less meat as a family.
So to make the transition easier (mostly on my husband) I’ve come up with some tasty options. These falafels are made healthier by baking and the quinoa coating crisps up nicely in the oven. They are tasty on their own or served up in a wrap or salad.
