Pizza features prominently on my table as it’s such an easy meal to put together. When I’m really feeling lazy, I don’t even make a base and just use a tortilla! Pizza is also how I use up leftover pasta sauce or I make “kitchen sink pizza” using up odd bits of veg from the fridge.
When I learned the trick of using creme fraiche as a base, it made throwing my pizza creations together even easier! I know it sounds weird and I didn’t believe it until I tried it but it works and has a really mild, creamy taste.
The combo of bacon and kale is classic and the caramelised onions add a sweetness and texture which rounds out the taste. This pizza has great crunch too. Super thin crust with crispy bacon and once roasted, crispy kale and onions too. Can you tell I like crispy?? And I’m not the only one. My boys gobble this one up every time and don’t complain about having it as leftovers either. It tastes just as good the next day.
To mix it up, I sometimes use Brussels sprouts instead of kale. They caramelise and get nice and crispy with a similar taste to the kale.
