Sometimes all you need to do is make a sauce.  This sauce in particular.  Why?  Because there is so much you can do with this delicious sweet and spicy, fruity combo.  It’s amazing as a sauce for chicken, pork or fish, or toss it with your side dish.  Forget using store bought teryaki sauces or stirfry sauces.  This is so easy to make and is so good you’ll be using it for everything.

I love that sweet and spicy combo.  Clearly it goes so well with a lot of things.  This is just the little kick of flavour you need to take your dishes to the next level. Because its sweetness comes from plums, this even tastes delicious with cheese!  Yes I said cheese.  I originally made this sauce as a dip for my fried mozzarella sticks, but it also works well as a spread for your cheese board!  I often make a jam of apricots and chilli for my cheese boards or bake brie so I think this could work as a lovely substitute. Basically get used to seeing lots of recipes involving this sauce.

This recipe calls for Mirin. Mirin is a Japanese sweet rice wine that brings a mild acidity and sweetness to the sauce.  You can substitute this with dry sherry but I would recommend that you try and find Mirin.  Its such a versatile condiment in itself that its worth purchasing.  I use mine to season rice and to make marinades for different fish and meat dishes.
